A quick and easy starter which is packed full of fresh flavours. This simple recipe relies on good quality products to combine for the ultimate Italian taste.
Ingredients
- Hambleton Bakery Baguette
- The Garlic Farm Smoked Garlic – 2 Cloves Diced, 2 Cloves Halved
- Handful of Fresh Basil – Chiffonade
- Cherry Vine Tomatoes – 400g Cut into Quarters
- 1 x Banana Shallot – Finely Diced
- Odysea Balsamic Glaze
- Extra Virgin Olive Oil
- Sea Salt & Pepper
- Chilli Flakes (Optional)
Method
STEP 1
In a large bowl combine your cherry tomatoes, banana shallot, 2 cloves of diced garlic and fresh chiffonade basil. Also add salt, pepper and chilli flakes (Optional) to taste.
STEP 2
Finish your mixture with 2 tablespoons of extra virgin olive oil. Combine mixture gently, cover and set aside to marinate for 40 minutes. Put this in the fridge if you like your topping to be chilled.
STEP 3
Preheat your oven to medium high heat and line a baking tray with parchment paper.
STEP 4
Cut up your baguette into about 2/ 2.5” thick slices and spread out over the tray. Drizzle both sides with extra virgin olive oil.
STEP 5
Place into the oven and toast until golden brown and crispy on both sides, making sure to flip when the top side is starting to colour. This is also delicious when charred on a grill in the summertime.
STEP 6
Remove your toasts from the oven or grill and when they are still hot, rub them down with your garlic halves to infuse the flavour into the freshly toasted bread.
STEP 7
Remove excess liquid from your tomato mixture to prevent from sogging.
STEP 8
Spoon the mixture onto your toasts then finish off with a drizzle of Odysea Balsamic Glaze. Serve Immediately.
