Fresh Basil Pesto

So easy to make at home, you’ll wonder why you haven’t been doing it already. All you need is a blender or food processor but if you don’t have one, a morter and pestle will also work.

Add to pasta, pizza or vegetables amongst other things for an extra pop of delicious flavour. You can make this vegetarian friendly by swapping out the parmesan for a hard cheese that’s suitable or you can use nutritional yeast instead.

STEP 1
In a pan on medium heat, add your pine nuts and toast for 3 – 5 minutes until nice and fragrant, make sure to stir frequently so they don’t burn. This will add nice depth of flavour to your pesto.

STEP 1
In a food processor or blender add all your ingredients including salt and pepper to taste, except the olive oil. Start your blender on slow and gently with a steady stream add your olive oil, making sure to scrape the sides down every so often so your pesto has an even consistency. You can add more if you want a runnier sauce.

STEP 1
Taste and check if it requires any more seasoning, add if necessary. Enjoy immediately or add to a sealed container and refrigerate.
