A refreshing and moreish cocktail with a powerful kick to it. Ideal to enjoy as you’re relaxing for the night or for party’s with family and friends.
With a delicate combination of fresh flavours with just a hint of absinth to round it off. So good, you won’t be able to put it down!
Ingredients
- Two Birds Absinthe 20ml
- Two Birds Speciality Cocktail Gin 60ml
- Belvoir Elderflower Cordial 25ml
- Cawston Press Cloudy Apple Juice 50ml
- Fresh Lemon
- Cucumber
- Sparkling Wine – Prosecco or Cava (Replace with Tonic Water for a lower alcohol percentage)
Method
STEP 1
Prepare yourself by ribboning your cucumber and setting aside. This works best with a standard vegetable peeler.
STEP 2
Grab your cocktail shaker and fill it with ice, add in 20ml Two Birds Absinthe, 60ml Two Bird Speciality Cocktail Gin, 25ml Belvoir Elderflower Cordial and the juice of half a lemon.
STEP 3
Shake vigorously for 20 seconds until combined and chilled.
STEP 4
Fill a tall glass with ice and your cucumber ribbons.
STEP 5
Add 50ml Cawston Press Cloudy Apple Juice to the glass.
STEP 6
Strain your mixture into the glass on top of the apple juice.
STEP 7
Top it off with prosecco or cava and give it a stir with your bar spoon. (You can also try with tonic water instead if you don’t want it quite so strong.)
