A simply delicious side dish which pairs perfectly with roast beef, chicken or veggie alternatives. A classic vegetable elevated to a show stopping accomptment.
Ingredients
- English Carrots – 1kg
- Longley Farm Luxury Jersey Butter – 110g
- Fresh Garlic – 4 Cloves Diced
- Gates Clear Blossom Honey – 3 Tablespoons
- 1 x Fresh Lemon
- Sea Salt & Pepper
- Fresh Thyme – 1 ½ Tablespoons
Method
STEP 1
Preheat your oven to 200°c
STEP 2
Peel your carrots and cut them once down the length. This should leave you 2 pieces per carrot with a flat side and a rounded side. You can leave them whole but they will take longer to cook.
STEP 3
Put a pan on the hob on a medium heat and add in your butter, honey and garlic.
STEP 4
To this mixture, add your carrots and make sure they’re all coated and incorporated in the honey and garlic mixture.
STEP 5
After they’ve softened slightly, about 10 minutes depending on the thickness of your carrots, squeeze a whole lemon’s worth of juice in then add thyme, sea salt & pepper to taste.
STEP 6
Get a glass oven safe dish, add in your carrots making sure to scoop in all the glaze.
STEP 7
Put them in the oven for 20-30 minutes or until they’re to your desired texture. Make sure to turn them over after 10 – 15 minutes. (You don’t want them to be completely mushy, still with a little bite would be ideal)
STEP 8
When serving, simply sprinkle an extra pinch of sea salt flakes over the top.
