Indulgent Triple Chocolate & Walnut Brownies

These rich as well as fudgy brownies are sure to get your taste buds tingling. With velvety chocolate flavour and also just the perfectly amount of subtle nutty crunch.

Great for parties, picnics or simply as an mouth watering treat for the family.

STEP 1
Preheat your oven to 180°c with a shelf in the middle of the oven. Grab a 20cm x 25cm oven proof dish or something of a similar size and line with baking paper. (Cutting into the corner helps this fit smoothly)

STEP 2
Add a large pot to the heat with about 3 inches of water in the bottom. Place a glass bowl balancing on the rim, ensuring the bottoms not touching the water.

STEP 3
Add your roughly chopped dark chocolate and cubed butter and gently heat until the two are combined, stir occasionally to help this along.

STEP 4
Once combined, place to the side and allow to cool. (This is so it doesn’t scramble the eggs later in the process)

STEP 5
In a large bowl tip in your caster and light brown sugar as well as your 3 large beaten eggs. Beat with an electric mixer for approximately 6 minutes, depending on how powerful your beater is, until it has almost doubled in size and with a creamy and smooth look.

STEP 6
Add your cooled chocolate mixture and fold without knocking all the air out you just created. (Making figures of 8 with a rubber spatula is the best technique)

STEP 7
Add in your flour and cocoa powder, running through a sieve and gently fold in like before. Do this until just before you think it’s completely mixed.

STEP 8
To this mix add your roughly chopped white and milk chocolate as well as the walnuts. Then finish combining making sure not to overmix.

STEP 9
Pour this mixture into your prepared oven proof dish using the spatula to smooth it into an even layer.

STEP 10
Place in the middle of your oven for 30 minutes. (If you like extra fudgy brownies, check after 25 minutes and if you prefer a cakey texture check after 35)

STEP 11
Take them out and leave to cool completely in the dish. Remove once cool and cut up, serve with cream and fresh fruit.
