Pear, Bacon & Blue Cheese Tart

This tart is well balanced in flavour with gorgonzola contrasting the lighter flavour of pear and onions as well as fatty, smoky bacon. Ideal as a starter or light lunch alongside a crispy, seasonal salad.

Quick, easy and delicious which is just as food should be.

STEP 1
Preheat your oven to 200°c and line a baking tray with foil or baking paper.

STEP 2
Put a pan on the hob with a splash of your oil on medium – high heat. Add your bacon and cook until slightly crispy. Set aside on paper towels to help get rid of any excess grease.

STEP 3
Turn the heat on your pan down and add in your sliced onions to the remaining bacon grease.  Cook for about 10 – 15 minutes with the lid on stirring occasionally so they don’t burn.

STEP 4
Remove the lid and cook for another 30 minutes. You want them very tender, golden and slightly caramelised.

STEP 5
Unfold your pastry sheet onto your prepared tray. Top with your caramelised onion, then the slices of pear, bacon and crumble the gorgonzola evenly over the top of it oil. Season with salt and pepper to taste.

STEP 6
Bake for 20 minutes or until the top is golden and crispy. Drizzle with your chilli & basil oil, cut up and serve immediately.
