This pomegranate guacamole packs a punch with flavour. A creamy dip with pockets of sweetness ideal to enjoy with a wide range of delicious dippable snacks, or simply eat it by the bowlful.
- 4 x Haas Avocados
- Garlic – 5 Cloves Finely Minced
- Pomegranate Seeds – 155g
- 2 x Fresh Lemons
- Extra Virgin Olive Oil
- Sea Salt & Pepper
- Chilli Flakes (Optional)
Grab a mortar and pestle (or a bowl if you don’t have one) and de stone your avocados and remove the skin.
Pop these in with a splash of extra virgin olive oil, the juice from 2 lemon’s and minced garlic as well as salt, pepper and chilli flakes to taste.
Mash up to combine, making sure to leave some chunks for a rustic texture.
To finish add your pomegranate seeds and stir through with a spoon.
Serve with tortilla chips or on the side of almost anything for a delicious flavour combination!
