Arrowroot is made from the tuberous roots of a number of South American plants and contains high amounts of amyl pectin, a starchy thickener.
It makes clear, shimmering fruit gels and prevents ice crystals from forming in homemade ice cream. It can also be used as a thickener for acidic foods, such as East Asian sweet and sour sauce. It is used in cooking to produce a clear, thickened sauce, such as a fruit sauce.
To thicken sauces and gravies, mix 1 rounded tablespoon arrowroot powder into just a little cool water. Add to 1 cup gravy or other sauce and stir constantly over high heat, about 10-15 minutes. The sauce will thicken suddenly. Once thickening occurs, stop stirring immediately so as not to break down the bonding and thin out the gravy.
