This Organic Sushi Rice is grown in the Piemonte region in north-western Italy. Once matured, the short grain rice is polished to perfection by a rice mill located in the nearby town of Trino. When only the outermost layer of a grain of rice (the husk) is removed, brown rice is produced. To produce white rice, the next layers under the husk (the bran and the germ layer) are removed leaving mainly the starchy endosperm.
