This Organic Umami Paste with Ginger is such a versatile ingredient. Traditionally made by adding a Koji to white rice that’s inoculated with a naturally occurring fermentation culture. It breaks down the rice into a paste that has an intensely umami flavour. The koji then helps to intensify the umami of anything you add it to, then it’s mixed with soy sauce, giving it a touch of extra saltiness and sweetness, while the ginger adds extra warming sweetness.
Squeeze a dollop into some coconut milk to taste, then add finely chopped red chilli and a squeeze of lime. Serve as a dip with Thai, Vietnamese and Malaysian inspired dishes, toss through a noodle or rice salad or simply drizzle over fresh avocado.
