Courgettes are a very versatile vegetable, it is always handy to have one in the fridge for last-minute meals. Equally good roasted or fried until soft and tender. These are best to lightly fry with oil or roast them until lightly golden and tender for a more intense flavour. Do not boil them however or they will become mushy and loose their flavour.
Enjoy alongside other fresh, seasonal vegetables in risotto, fritters or even in a cocktail or chop into small chunks and drop into a chilli or pasta sauce. They absorb flavour very well.
