The Fennel Bulb is a flowering species in the carrot family. The marmite of the vegetable world, you either love it or hate it as is has a very strong aniseed flavour. From the same family as the herb and seed of the same name but it can also be known as Florence fennel or finocchio. This bulb is very popular in Italian cooking and looks like a heavy bottomed celery.
Ideal for cooking or eating raw. When eaten fresh it has a crisp texture and assertive flavour which lends well to a salad or as a healthy snack. When cooked the flavour mellows and softens up so it’s far more versatile but can be enjoyed in risotto, as a gratin or barbequed with black olive dressing.
