Swedes are not the most glamorous of vegetables, but one with plenty of substance and a sweet, earthy flavour. Smaller swedes are often more tender in texture. A great replacement for potato that can be mashed, roasted, used as a pie topping or even made into gnocchi. They have a delicate, sweet flavour with a great texture and pair perfectly with nutmeg, parsley and coriander.
Why not make root vegetable mash by mixing with carrot and potatoes, seasoning heavily.
