A quick and easy side dish which pairs perfectly with chicken dishes. Packed full of fresh flavours for a delicious combination sure to go down a treat.
- 2 Tablespoons of Unsalted Butter
- Fresh or Frozen Sweetcorn – 250g
- Fresh Coriander – 20g
- 1 x Small Green Chilli
- 1 x Medium Beef Tomato
- 1 Tablespoon of Lime Juice
- ½ Teaspoon of Ground Cumin
- Salt & Pepper to Taste
Put a large pan on medium heat and add in your unsalted butter.
Once melted add in your sweetcorn and cook for 3 – 5 minutes or until tender (Depending on if you use fresh or frozen) making sure to stir it and coat everything evenly in butter. About half way through add in your diced green chilli.
Reduce the heat and add in your tomato, lime juice and cumin. Season with salt and pepper to taste and sauté for another 3 minutes or until its all heated through and combined.
Remove from the heat and stir in your fresh coriander and serve.
