Treat your family and friends to a delicious cake this weekend. The mouth-watering combination of baked apples, soft cake and maple syrup is so good, you won’t be able to stop at just one slice.
Serve with a dollop of crème fraise or whipped cream for an extra indulgent treat.
Ingredients
- 3 x granny smith apples (peeled, cored and cut into eighths)
- 260g plain flour
- 1 x teaspoon baking powder
- ½ x teaspoon bicarbonate of soda
- 1 x teaspoon salt
- 3 x large eggs
- 1 x tablespoon vanilla extract
- 270g white sugar
- 340g pure maple syrup
- 170g unsalted butter (softened)
- 180g buttermilk

STEP 1
Preheat the oven to 180°C and prepare a 10” round cake pan by greasing with butter and sprinkling with flour.
STEP 2
In a large pot, bring the maple syrup to a boil over high heat, then simmer over low heat until very thick and reduced to about 75% of the original amount of liquid, it should take about 20 minutes.
STEP 3
Pour the thickened syrup into the cake pan. Carefully arrange the apples in a circle pattern or any way you would like. Keep in mind this will by the top of your cake.
STEP 4
In a large bowl, whisk the flour, baking powder, baking soda and salt. In a separate bowl or jug, whisk the eggs with the buttermilk and vanilla.
STEP 5
In a third bowl, beat the butter and sugar until fluffy and then add in the dry and wet ingredients a little at a time alternating until the batter is smooth. Make sure to scrape down the side of the bowl with a rubber spatula.
STEP 6
Spread the batter over the apples in an even layer and bake the cake for 1 hour, until golden on top and a toothpick inserted in the centre comes out clean.
STEP 7
Let the cake cool on a wire rack for 45 minutes.
STEP 8
Place a plate on top of the cake and flip it so the plate is underneath. Tap lightly to release and remove the pan.
STEP 9
Let the cake cool slightly, then cut into wedges and serve with crème fraiche or whipped cream.
