Kohlrabi is a cultivar of wild cabbage that can be eaten cooked or raw. Everything but the skin is edible so there is little waste.

Try preparing the leaves and steam or sauté them as a side. Kohlrabi is ideal when cut into matchsticks and used in coleslaw or add to salads or grain bowls.
