These quick and easy mimosas are sure to impress your valentines date this year. You can swap out the strawberries and sugar rim for raspberries or a spring of mint instead. Ideal in a vintage coupe style glass or a classic flute.

Ingredients
- Briottet Crème de Framboise – 50ml per glass
- Gallone’s Raspberry Sorbet – ½ tablespoon per glass
- Bottle of Cava, Prosecco or Rose Prosecco
- Lemon – Cut a thick wedge
- Sugar – 50g for the rim
- Strawberries – for garnish
Method
STEP 1
Prepare your cocktail station by putting your sugar onto a flat plate and cutting your strawberries. For the heart shape, simply remove the greenery in a V cut and then slice them from top to bottom, down the middle, the opposite way you cut the V.
STEP 2
Rim your glass with the lemon wedge and dip in sugar. Drop your ½ tablespoon of sorbet into the glass, add in 50ml of Briottet Crème de Framboise and top with your sparkling wine. Add your strawberries strait into the glass or skewer them and place on top before serving.
