Semolina Flour consists of a rather coarse flour made with wheat.
This Semolina Flour is made from freshly milled Durum wheat, which is finely ground and sifted into a pale, creamy white flour. Use it to make Indian puddings or avan dough for Italian gnocchi. Semolina is also a great ingredient for adding texture to food – dust homemade pizza bases with a layer of semolina for extra crunchy crust.
Its also useful when manipulating a pizza dough or Ciabatta dough. This coating of semolina acts as an absorbent layer or barrier which prevents sogginess and allows the dough to crust whilst baking.
