A glass full of summer made with delicate and light flavours which combine into something delicious. Perfect for parties or when you have guests over at the weekend and sure to hit the right spot when the sun is shining.
This will make around 8 glasses, you can alter the amount of juice or gin to give you a stronger or weaker drink if you want.
Ingredients
- ½ a Small Watermelon – Cubed
- 2 x Fresh Limes
- 3 x Tablespoons of Caster Sugar
- 1 x Bottle of Champagne or Prosecco
- English Drinks Co Cucumber Gin – 200ml (or 400ml if you want them stronger)
- Fresh Mint Sprigs – For Garnish
Method
STEP 1
In a blender, add your watermelon, caster sugar and squeeze both limes into the melon, making sure not to get the seeds in it.
STEP 2
Blend together then strain with a fine mesh sieve and remove any solids or chunks.
STEP 3
Using Champagne flutes or glasses of a similar size, fill ⅓ way up with your watermelon mixture. Add in 25ml (or 50ml if you want them a little stronger) of English Drinks Co Cucumber Gin and top the rest of the way up with Champagne.
STEP 4
Garnish with a sprig of mint and serve (You can also try watermelon slices, lime wedges or cucumber ribbons).
