This easy yet indulgent breakfast is ideal for those weekends when you’re not counting the calories. An ideal way to use up extra homemade banana bread, but this can also be done with shop brought.
Mix it up and add some different flavours or toppings to make it your own. This is ideal for 4 people with one slice each.
Ingredients
- 4 x Slices of Banana Bread (Use our Boozy Banana Bread Recipe here)
- 2 x Large Eggs
- Double Cream – 175ml
- 1 x Tablespoon of Clear Honey
- 4 x Tablespoons of Unsalted Butter
- 2 x Large Ripe Bananas – Sliced
- ½ x Teaspoon of Vanilla Extract
- ½ x Teaspoon of Cinnamon
- Pinch of Salt
- Icing Sugar to Serve
- Maple Syrup to Serve
Method
STEP 1
In a large bowl, deep set plate or empty tart dish add your eggs, honey, double cream, salt, cinnamon and vanilla extract. Whisk well until fully combined.
STEP 2
Put a large pan on the heat on medium – low heat with 1 tablespoon of butter and allow to melt.
STEP 3
Soak your banana bread slices for 30 seconds on each side in your egg mixture, you should be able to do at least two at a time.
STEP 4
Once the butter has melted add in your slices, two at a time again and cook on each side for 3 – 4 minutes or until golden brown and crispy on both sides.
STEP 5
Repeat the process with the other two slices, adding in another tablespoon of butter.
STEP 6
Once you’ve cooked all the slices, put them in a hot cupboard or the oven on a low temperature to keep them warm for a few minutes.
STEP 7
In the same pan, add in your last 2 tablespoons of butter and sprinkle the brown sugar around the pan in an even layer. Add your banana’s in an flat layer around the pan and cook for a couple of minutes each side, make sure they’re golden and delicious before you flip them.
STEP 8
To serve, add a slice or two of banana bread with a dusting of icing sugar, a few spoons of caramelized banana and an extra drizzle of maple syrup. Serve and enjoy strait away.
